Which games are those? I'm genuinely curious, because no matter which of my ~50 downloaded games I try to launch with Steam turned off, they launch Steam first.

Take a look at this list. It's mostly accurate, but there could be a few false positives as it's editable by everyone. It also includes more than just "DRM-free" games, so the title is by now a bit misleading. The list is mostly done and maintained by some folks from the GOG forums where I also linger and help.
