I have mixed feelings about harems, though they lean towards your own opinion. I truly dislike protagonists who don't choose who I want them to choose or are indecisive to the very end.

I recommend Symphonic Rain, a personal favourite of mine, and it is a good choice for one that is new to VNs. Good music too.

I'm sure you have figured this out, but translating and editing visual novels requires decent Japanese and some creativity, seeing as Japanese is far different from English.
